Wild Foods: Intro to Harvesting and Processing Local Edibles

Denver, CO - Hosted by Mountain Herbalism

This classroom-based workshop with Kat Mackinnon and Adrian Mintzmyer will be an overview of Rocky Mountain edible plants. We aim to intersperse brief lecture segments with lots of hands-on opportunities to process and taste abundant local foods. We’ll be sure to cover a bit about:

  • Wild harvesting ethics

  • Botanical ID and Safety

  • Harvesting methods

  • Seasonal harvesting: when&where nuts, fruits, seeds, greens, and roots become available

  • Preservation and cooking methods, including drying, fermentation, canning, steaming

Please bring lunch or snacks to class so that you can keep yourself fueled and hydrated while we teach!

This class will be held at an indoor/outdoor classroom space, and we may be inside or outside depending on weather. Please come prepared!
